A versatile recipe that encourages children to get excited about healthy eating – when they help with food preparation they’re much more likely to eat their creations.

The vitamin C from the strawberries and lemon juice helps with iron absorption and the coconut milk adds a healthy fat boost. Feel free to experiment with whatever fruits you have on hand.

400g can coconut milk (preferably BPA free)

1 banana

1 avocado or mango, peeled and chopped

1 cup frozen strawberries

½ cup chopped raw broccoli

1 cup chopped kale or baby spinach

Juice of ½ a lemon

2 tablespoons Blue Coconut oil, melted or soft

1-tablespoon organic honey (raw)

1-tablespoon almond butter

1-teaspoon cinnamon

Process all ingredients in a blender until smooth. If you like your smoothies a less thick, add some water or coconut oil.

Toppings are optional, but increase the fun aspect for kids with chia seeds, desiccated coconut, pumpkin seeds, cinnamon and sultana or whatever dried fruits, nuts or seeds you have in your pantry.
